Flank steak, eggplant and potato

Finally a cooking post! Ha!

After much thought and discussion it was decided that red meat had not been consumed for some time, so of course that means red meat must be consumed post haste. But the selection wasn’t all that great, the meat section looked like it had been cleaned out. I did find a nice looking flank steak for $2.67. Damn you Lotte Plaza! Restock the meat case!

Flank steak can be such a cruel mistress. If not treated right it can go very bad, very quickly. But when the treatment is good,  you are rewarded with something special.

I decided to use a marinade this time. The marinade was olive oil, rice vinegar, garlic and worcestershire sauce. It should of had salt and pepper,  but I forgot. The steak marinated for about three hours. 

I cooked it on a very hot cast iron pan ($10 at IKEA!). You need to cook it quickly, or it will get really tough. Flank steak also needs to be on the rare side or it’s tough.

Along with the steak there was a baked potato, $.69 a lb and a eggplant, $.99 a lb.
